🍠 Cooking Portuguese Potatoes

What do you mean Portuguese Potatoes?

It’s the way Portuguese people prepare them.  (Well, how my mama makes them).

There is no exact measurements to this potato recipe, because it gets thrown all together into a pot and there you go.  But I can give you a general idea on how to prepare these delicious potatoes.

In a small pot, throw in peeled and halved potatoes and sweet potatoes.  Cover them in water, a rosemary sprig, generous amount of salt (let’s say about 2 teaspoons for about 4-6 potatoes, depending on the size)  and lastly about a heaped teaspoon of fresh or crushed garlic.  Drizzle with olive oil, a dollop of butter and boil until they’re cooked.

Drain the potatoes, drizzle again with some olive oil and enjoy them!  That’s it really.

Why add olive oil and butter to the pot if you’re just going to drain it?  Well, one needs to add the flavour INTO the potatoes and not just ONTO them.  Each flavour has to stand out.  If they seem bland, you’ve obviously added very little ingredients.

Alternatively you can use oregano if you don’t have Rosemary.
